Why we use Buffalo milk

Many people don't know that Mozzarella cheese is traditionally made from water buffalo milk. Buffalo mozzarella is often considered the best for pizza, especially Neapolitan-style, due to its rich, creamy texture and flavor, stemming from the high fat content of buffalo milk. Its delicate, slightly tangy taste and ability to melt beautifully, creating a "cheese pull", make it a favorite among pizza enthusiasts. Mozzarella from water buffallo is considered to be higher quality and better tasting than Mozzarella made frow cow milk. Buffalo milk, being higher in fat and protein, results in a richer, creamier, and softer mozzarella with a unique, slightly tangy taste.
